Certainly, there are skills that are more complex and respected than skinning, but skinning is a necessary and dependable skill that provides a reliable source of income.  Many players do not choose to take up skinning, and are missing out of an easy way to acquire more loot from the monsters they kill.  In some cases, it would be acceptable for you to follow behind someone who does not have skinning, and skin the animals they kill for free.
